Arabic Rice Pudding

Rice pudding:
6 cups milk
1 cup short grain rice
1 cup sugar
1 tsp starch dissolved in 2 tsp milk.

1/2 tsp ground Mistaka (optional)

Cook rice in milk on medium low heat until rice is cooked and all opened up, add sugar and starch. Stir til thickened. Pour into cups.

Chocolate pudding: (optional, but to my husband its VITAL)

1.5 cup chopped chocolate (I used truffles that I had on hand, u can use any semi-sweet or milk chocolate or chocolate chips or whatever, as long as its chocolate)
1/4 cup starch
1/2 cup sugar
1/8 tsp salt
3 cup milk

1 tsp cocoa powder
1 tsp starch
2 tbsp milk

Cook over double boiler

Combine starch, sugar and salt, add milk slowly and whisk. Stir every now and then while cooking in a double boiler (pot of water with a bowl on top will do)
When it thickens (15-20 mins) add the chocolate and the cocoa powder mixed with the starch and milk. Keep stirring until fully melted and thick. Pour over the rice pudding, let set and serve.




  1. do you rinse the rice from the starch and soak it prior to cooking it in milk? do you boil the milk first before putting in the rice? and, can i use long grain rice instead of the short one?

    • Hi, sorry I just saw this. No I don’t rinse the rice becuase that is what will make the pudding thick. Long grain rice doesn’t have that same starchiness.
