Easy Grilled Tomato Salad

  This is a must when we barbeque on sundays. it just isnt the same without it.   Grill about 6-7 medium sized roma tomatoes (or equvalient in size of any other tomato) Once all soft and peel is coming off.. Take off grill and peel them..chop.. set aside Crush a jalepeno, 1/2 tsp dill seeds, fresh basil, fresh/dry dill weed (optional), 1/2 salt, one clove garlic (optional), fresh parsley.. Crush all together. Then add the tomatoes and smash together as well. Taste, add salt if needed, and squeeze some lemon juice to taste. Enjoy! Chicken Shawerma Salad

This recipe is very easy and quick, most ingredients can be found at home already. So let’s get to it: Ingredients: 3 chicken breasts 1 tsp salt 1/2 tsp mix spice 1/2 tsp cinnamon 1/2 tsp black pepper 1 tsp garlic powder 1/2 tsp ground cardamom 1 tsp paprika (optional) 3 tbsp lemon juice 2 tbsp vinegar Salad ingredients: Lettuce Tomatoes Cucumbers Parsley Radish Anything else you like Shawerma toppings: Thinly cut onions sprinkled with sumac. Any kind of thinly cut pickles Tahina dressing: 1/2 cup tahini 3 tbsp vinegar 1/2 tsp garlic powder 1/2 tsp salt 1/2 paprika Warm water Directions: Marinate chicken with all its ingredients for one hour. This recipe took me a long time tweaking a bit of this and that, til it became as close as I can remember the authentic Mexican dip we had on our trip to Mexico. I will never forget that taste!!!! Anyways, I’m not claiming this is anything authentic, but it is most definitely delicious. Especially with chips… Try it for yourself Recipe: 2 large ripened avocados (soft to touch but not super squishy) 2 Roma tomatoes, chopped 1/2 small red onions, finely diced 1 jalepeno finely diced Half a bunch of cilantro, finely chopped Juice of a lemon 1/2 tsp salt.. Baba Ghanooj (eggplant dip)

Not sure why the egyptians call this dish “Baba ghanooj’, or for a literal translation ( the whiny father ???)… its a great side dish/ appetizer and very easy to prepare.   Ingredients: 1 large eggplant ( or 3 small araby eggplants)…. pricked and grilled in the oven or on the grill, then peeled 1/2-1 jalepeno to taste 1 clove garlic 1/4 salt 2-3 tbsp tahina 2-3 tbsp lemon juice pita bread for dipping tomato, diced,(optional)     grill the eggplant by poking several holes into the eggplant, and roast in oven or on grill for about 25-30 mins on 375. take it out when it looks all wilted and soft. let it cool then start peeling it while warm.
