I love me a good crunch, and i’m always hungry. So the best way to shove my face with healthy calories is to have trail mix on hand all the time. easy to munch on and good for you.   i’ve found that i dont like most of the ready-made store-bought mixes out there, (talk about all the peanuts they add while saying less than %% peanuts! ) I always prefer to make my own mix at home, Just buy the nuts/dried fruits/chocolate covered goodness that you like and mix them and serve. AND yeah, it will be a bit pricey at first, but it will last a while and you would be investing in your health and well being. Do your kids eat fish? I mean other than in fish stick form drained in ketchup?? My kids love seafood. Lobster, crabs, shrimp..seafood soup, even muscles and clams.. LOTS of it… But when it comes to fish, they act like its the grossest thing in the world. And I can’t get them to eat it. And it’s been bothering me. Arabic Rice Pudding

  Rice pudding:6 cups milk 1 cup short grain rice1 cup sugar1 tsp starch dissolved in 2 tsp milk. 1/2 tsp ground Mistaka (optional)Cook rice in milk on medium low heat until rice is cooked and all opened up, add sugar and starch. Stir til thickened. Pour into cups.Chocolate pudding: (optional, but to my husband its VITAL) 1.5 cup chopped chocolate (I used truffles that I had on hand, u can use any semi-sweet or milk chocolate or chocolate chips or whatever, as long as its chocolate)1/4 cup starch1/2 cup sugar1/8 tsp salt3 cup milk1 tsp cocoa powder1 tsp starch 2 tbsp milkCook over double boiler Combine starch, sugar and salt, add milk slowly and whisk. I used the exact recipe from Najat’s kitchen . recipe and ingredients are here she speaks in arabic, but has english subtitles to whoever needs them.
